Holiday Foods Love or Hate Them

Oye, menudo. What is it with that stuff? I love the hispanic foods my friends fix, but a few things they just love that I have yet to get the hang of are: menudo, cooked whole cordero in a steamer, (bones and all) and that over-stuffed pan dulce. (At least, here in our part of the country, to me those cute, huge pastries I've repeatedly tried and cannot abide seem to have a stale taste. Maybe because they ARE stale!)

Oh, as a fun footnote to the Pozole adventure, today I came across a gourmet dried pepper rack at an upscale foodie store in a nearby town, and discovered a $2.00 packet of dried New Mexican peppers! Thanks to StillLivin, I got one. Now, what can I do with it? I still have the frozen pozole.....

Made Jambalaya last night....no Andoille sausage, so just used mild Italian sausages. And bits of frozen turkey from Thanksgiving instead of the chicken it called for, using a pint of that turkey bone broth I'd frozen before I'd added the herbs for pozole. Made enough for leftovers for New Year's Day!

Your jambalaya sounds delicious. I dont even have an official chile drying rack. LOL. You can add dried chiles to just about anything. Chicken tinga, salsas, móle, red pozole, tamales, phô, just about any stew, marinade, hot cocoa (and add a hint of cinnamon and you have Mexican chocolate), sprinkles on papaya or mango with lime juice, add to a dry rub for meats and wings. You can do almost anything with dried, powdered chiles.
Now I want some cucumber with chile powder and lime and salt!!!

I kind of consider this a holiday tradition - when I get my act together and shop early enough, I like to make black-eyed peas on New Year's Day. And I almost failed today. Had to go to three different grocery stores to find the black-eyed peas and ham hock. First store had neither; second store had one can of black-eyed peas, and third store had dried black-eyed peas and the ham hock. But I really had to look for the peas - they were down to the last three bags, so they were all the way to the back of the bin, on the second from lowest shelf to the floor; I overlooked them twice before looking a third time. I bought two bags, so I'm ahead of the game for 2027! I do remember a couple of years waiting until New Year's Day, going to the grocery store and not finding anything.

Will make them in my Instant Pot, so I don't have to soak the peas overnight tonight. Will serve them over rice and with a side salad.

Number4, I don't know if dried Black-Eyed Peas keep longer than a year. I think you did well and should just cook them ALL UP! :)

I did enough today to give us two meals, so I'm good.

The bags say they should be used by 2028!

They were incredibly tasty!

I thought I had a bag of black eyed peas left from last year, but I guess I used them at some point, because I couldn't find them. I hit 4 stores looking for more and finally settled for a bag of mixed beans that included black eyed peas. I made them with smoked turkey, and they were so good!
